Hey! Just started homebrewing. My first brew was a bit of a fizzer (literally), but not particularly tasty. Note to self kits generally need extras to taste good.

But I've been researching, checking out what others are doing, and moving on. It's fun, and you can get some quality product cheap - around 10 - 20 bucks a carton.

My next brew's going to be a dark (made with extract - I don't have the equipment for mash, yet). I can't wait. Really looking forward to it =).

I've got some alcoholic lemonade going at the moment. Thinking about throwing it out, but it's nearly done. I used a beer yeast (and you can taste it) =(. Hoping that the taste will calm down during bottle conditioning.

Hm, can you brew your own beer, and actually make it taste nice? Like not just fizzy bitter stuff like every beer I've ever tasted? Cos I might be interested in drinking it if so.

I have on several occasions, had people tell me, 'oh, this doesn't taste like normal beer, it's got strawberries/chocolate/whatever in it, it's the best beer in the world'. All I taste is slightly varying levels of bitterness in a fizzy brown liquid. Horrible stuff.

Mainly bitters and stouts. I had to stop brewing beer as it was just too good and too cheap. And you know me...I just loves my beer!

I'm not really into bitters myself. That said I've tasted some good ones recently (homebrews). If you get enough malt into the brew they balance.

Mmm, darks are good though.

PS Errr... did I miss something. Why the twinnie av?

Yup! Sooo many alternatives to just your average swill. I'd recommend 'witbier' if you're not into the hops. They have a really low bitterness rating generally, and some good alternative flavours.

I recommend call 'Dark Elf Witbier' (by the little brewing company) - I've had a couple of their brews lately. Really good, and light on the hops. Really flavoursome though (witbiers often have oranges and corriander seeds added for flavour).

Some of the darks aren't too hoppy either (not stout - that IS bitter). If you're looking for something your local will have Toohey's Old's not bad. Leffe stout is my personal fav, but expect to pay for it.

Hoegarden's not bade either - not too bitter, but with some great flavours.

What if I distil alcohol at home?

Even if you have a still at home, you must have an excise manufacturer licence before you start to distil any alcohol. You must pay excise duty on the alcohol you produce. The current rate is in excess of $65 per litre of alcohol. For example, on a 700ml bottle of vodka at an alcoholic strength of 40% the excise duty would be approximately $18 per bottle.

Hmmmm is there much yeast visible in the brew? (cloudy?) You can always transfer it to a second container so that most of the sediment is left behind and any remaining will proceed to settle on the bottom of the second container after a day or so. Maybe even a filtration process with a steril cloth (never done or really heard about this but should work?)

I've only brewed beer so far. Several cheap kits (coopers & sugar) but I found them to be quite bland and a bit too alcoholic. So I moved to some brewcraft kits for a bit more money but they seem to go pretty good. Still think they could do with a stronger body though.

Best bang for buck (taste wise) so far is Coopers Pale tin with 500g of light dry malt for about $17 for 2.5 cases. Still though, could do with slightly more flavour.
